Daniel Brillat (born July 27, 1945 in Vieu) is a French former racing driver.

Daniel Brillat was active in sports car racing in the 1970s . His first international start was in the 1969 Tour de France for automobiles , where he finished 37th overall in a Renault R8 . He competed in the sports car world championship and the European touring car championship . He contested the 24 Hours of Le Mans four times . He made his debut in 1974 . He achieved his best result a year later when he finished 27th in the final standings with Giancarlo Gagliardi and Michel Degoumois in the BMW 2002 TITouring car class won.
